A few weeks back we had a wonderful meeting with the folks at The Brooklyn Kitchen. If you haven’t been to their space, you are missing out! It is amazing in there and the open butcher area fills the room with the glorious aroma of meat. After speaking with the owner, we found out that they host a pre fixe brunch that goes for as many courses as you can eat. The catch - it only seats 2 people and reservations fill up fast. We are determined to get in…
Our meeting ended and we were ready to head out when we realized that it was impossible to leave without some Brooklyn Kitchen goodness! We headed straight for the meat counter and picked up some beautiful lamb gyro sausages.

We picked up some fixings, took the scrumptious package back to my place and got cooking!

We didn’t want to ruin the powerful flavor and integrity of the meat, so we decided to simply saute the sausages with some red bell peppers and onions.

Sabrina had some cauliflower laying around and we decided that it would be a wonderful side. We seasoned it with some salt, pepper, oil, and coriander and baked it in the oven until tender. The flavorings accompanied the lamb gyro perfectly.

I love the brightness that the red pepper brought to this meal. The sausages carried a heavier savory element that was evened out with the light sweetness of the peppers.

We pulled some of our homemade focaccia bread out of the freezer and toasted it. We then placed the lamb gyro sausage on top of the bread and covered with the sauteed peppers and onions. Accompany this with a side of cauliflower and you have yourself one AMAZING meal!

Last week, The Jam Stand catered a Jam Pairing/Going Away dinner hosted by Kris Sedeño.
The dinner was JAMTASTIC!
1st Course: Warm Brie served with a trifecta of jam - Pineapple Cilantro Jam, Raspberry Jalapeño Jam & last but never least, Bacon Jam.
2nd Course: Arugula & spring mix salad with toasted walnuts & gorgonzola cheese, tossed in Raspberry Jalapeño Jam.
3rd Course: Whole roasted chicken with an Apple-Pear Jam glaze & baked potato with warm Bacon Jam, scallions & sour cream.
Dessert Course: Jam Stand Cake in a Jar - Vanilla cake with Banana Jam & Homemade Peanut Butter filling, topped with warm chocolate ganache.

Yes, we serve our water and wine in Jam jars. Would you expect anything less from us? Our lives revolve around JAM! We have actually named ourselves the bag ladies from schlepping ridiculous amounts of jam jars throughout the city in MASSIVE BAGS! You’d be surprised at how heavy those things can get!

We know that we probably sound like a broken record, but honestly, what is better than food with friends? We receive such joy in knowing that we are bringing people together for a good home-cooked meal. Many New Yorkers forget that their ovens work for something more than extra closet space.

At the request of our good friend, Mr. Brendan Skonieczny, we made pineapple cilantro jam. The natural sweetness of the fruit paired with the freshness of the herb combine to form a pure syrupy delight.
We know that cilantro is one of those tricky herbs that people either LOVE or HATE. We err strongly on the side of love! Perhaps a little too much. As a child, I would eat cilantro right off of the stalk. Actually… I still do that.
I believe that anything can be made better with a little bit (or a lot a bit) of cilantro. Even something as delicious as pineapple, which I might boldly say is my favorite fruit… mm I take it back, not ready for that kind of commitment.

We started by chopping up 3 pineapples, but somehow only had 2 left by the time we were ready to get jamming. Pineapple is just SOOO juicy and perfect. We couldn’t resist.

We threw the pineapple and cilantro in a pot and our concoction was born - Pineapple Express: Starring James Cilantro. Hopefully you’ve seen the movie or at least heard of it.
We wish you could smell through these pictures because let us tell you.. the pungent aroma of pineapple and cilantro is magical.

We want to make some homemade fish tacos to pour this jam over. I’m sure we will be posting soon.
We like to try to save the jams for our customers, but with a flavor like this we are definitely hoarding some for ourselves!
